Crustless Mini Quiche

 Crustless Mini Quiche

Ingredients:

7 large eggs

1/2 cup skim milk

1 cup low fat Monterey Jack cheese

4 oz diced lean ham steak

1/2 cup chopped onion

1 cup chopped broccoli (minus the stems)

garlic powder, salt and ground pepper to taste

Directions:

Whiz up your eggs, milk and seasonings in your bullet or food processor to get it real fluffy.

In a separate bowl add your broccoli and onion with some water and microwave this for 1.5 minutes (to start the cooking process so they aren't all hard and crunchy in your quiche).

Add this to your mixture.           I poured my egg mixture into a bowl then added the veggies. Next, add your cheese and diced ham.

Spray a 12 cup muffin pan with Pam . Then by dipping a 1/4 cup measuring cup into the mixture, get good scoop of the chunky stuff and the egg

solution and pour into each cup. I almost went to the top, maybe a 1/2 inch or so down from the top. Make sure they are all even

Bake at 350 degrees for 30 minutes. Enjoy.

Gastric Bypass:  Life Is Great  by Dee Desmond

On January 1, 2008, I weighed 285 pounds.  I had my Gastric Bypass surgery  and eight months later I am down to 191 lbs. (with clothes and sneakers on.)  Naked (what a sight), I am 188 lbs.!  I can’t believe that I lost 94 pounds in 8 months!  I cry every time I think about it.   I was carrying around a whole other person (a very thin person)…a lot of it on my belly.  (I like to fondly call my belly “the Desmond Watermelon.”)    I have not been at this weight for over 30 years. Once I lose all my weight (no doubt in my mind that I can do it) I will go to a plastic surgeon, and for the first time in over 30 years I will have a flat stomach…and finally, finally be able to wear my blouses tucked in.

I feel great!!  I feel so much better and look so much better (not conceited…yet ha-ha).  I’m taking much better care of myself.  I even grew nails for the first time in my life!!  I can’t wait to see how I do during the next 8 months…how it will feel to be a normal sized person.

In the mornings, before my operation, I could barely walk to my recliner.  I had to wait 2 to 3 hours before I could even think about getting dressed.  Now, most days I am dressed 10 minutes after I wake up!  Isn’t that amazing?  Tying my shoes is easier now.  Everything is easier now.

For the first time in over 5 years, I walked 4 blocks,  slowly,  But I did it!!!  Before my operation, I was lucky to walk ½ a block without my hips screaming in pain.  I can now visit friends and family.  I wasn’t able to visit anyone because my body just couldn’t handle the drive nor could I sit comfortably in anyone’s house.

My life is slowly changing.  Each month I am able to do a little bit more than before.  I am so deliriously happy!  I can’t even imagine what my life will be like when I lose 50 more pounds

I have a Slim Fast Low Carb protein shake every morning.  It gives me 20 grams of protein.  I also have a protein bar every day.  It keeps me from having any chocolate and junk food urges (truly), plus it gives me 15 more grams of protein.  I make sure I have fruit and veggies every day, try to get in as much protein as I can, drink lots of water and crystal light and I am still very diligent about taking all my vitamins and calcium daily.  I almost never have pasta, potatoes or rice.

Once, sometimes twice, a week I have bread.  I eat a hot dog with 1/2 the bun and I am stuffed.  Funny, but I have a hard time eating chicken…drumsticks, thighs, or white meat…and meatballs.  But, I don’t have a problem having steak (I chew, chew, chew.)

For those of you who aren’t sure about doing it, I can only tell you my experience.  My operation was so easy.  On a scale of 1-10 pain wise, I had a low 1.  I was walking all around the hospital that night.  I don’t feel deprived, just extremely happy.  This is the best thing I have ever done in my life and its thanks to my dear friend , Arc, who is my inspiration and I cant thank you enough.

My story is dedicated to my darling Doctor David Buchin and the wonderful Sophia Mcleod-Pearson.  Doc…you gave me my life back again.  Thanks to you I am running around aaalllll day long, healthier by far and so very happy…and able to live a lot longer than I ever thought.   Sophie …I ask you a million and one questions, and you always, always answer with a smile in your voice.  Thank you both for always being there for me.  God Bless You Both. Dee.
