Edamame Hummus

Ingredients

1-  12 oz. Pkg. shelled  Edamame Fresh or Frozen
1/4 C tahini
1/4 C water
1/2 tsp. lemon zest
Juice from 1 lemon
Zest from one lemon
3 large cloves garlic,
3/4 tsp. kosher salt
1/2 tsp. cumin
3 tbs. extra virgin olive oil
1 tbs. chopped cilantro (or 1/2 tsp. dried cilantro)
2 tbs flat-leaf parsley
1/8 tsp. red pepper flakes (if tolerated)
1/4 tsp. coriander

1.  Boil soybeans and whole garlic cloves in salted water for 4 minutes
Drain and rinse with cold water

2.  Puree Edamame, tahini, water, lemon zest and juice, garlic, sea salt, cumin, red pepper flakes, coriander and cilantro until very smooth.

3.  With motor running Drizzle in  olive oil until combined.

4. Transfer to serving dish and serve with protein chips or cut veggies.
