LEMON ICEBOX PIE
One 4-serving size pkg. sugar-free vanilla instant pudding
1 tub Crystal Light Lemonade or Sunrise Orange
2 cups milk
1 12-ounce container Cool Whip, thawed
Mix first 3 ingredients together. Fold in the Cool Whip. Spoon into a pie shell, or custard cups and chill or freeze.
This sets up like a mousse and is so fluffy and refreshing. Try it topped with fresh berries or warm jam drizzled over the top.
I made this at a family gathering this weekend, using the Crystal Light Lemonade. I didn't want the extra calories and carbs by putting it in a pie shell, so I just spooned it into my Pyrex pie dish. Kept it in the freezer overnight, then when I got to my Dad's I put it in the fridge. Everyone absolutely loved it! It will be a great dessert for the summer, cool and refreshing.
